Cinnamon Grade – ALBA | Extra Special

The costliest and delicate cinnamon grade is Ceylon Alba, and second place goes to extra special cinnamon grade. Both grades are thinnest and most delicate cinnamon stick. However, this two grades has a good taste and a fresh, exotic aroma among the cinnamon types. The top Ceylon cinnamon available in Sri Lanka is called Alba.

Due to its thinness and ease of disintegration, it is extremely versatile in the kitchen. Alba cinnamon is usually utilized in high-end meals and beverages because to its excellent qualities. This kind of cinnamon is expensive and scarce in the market

Continental Grade – C5 Special | C5 | C4

Quilling also diameter classified primarily C-grade, sometimes referred as the continental grade. The grades C5, C5, and C4 are among the several subtypes of C. The second-best grade Ceylon cinnamon available on the market is this. It has a silky texture, a distinct and sweet flavor, and is tan-yellow in colour.

Mexican Grade – M5 & M4

Mexican grade, sometimes referred to as M-grade, is a form of cinnamon that has a unique colour, flavour, and scent. M-grade cinnamon has a strong aroma and a sweet flavour. This type of cinnamon has the same premium qualities, but it is easier to find and less expensive than Alba and C-grade cinnamon.

M5 grade cinnamon sticks are typically used in desserts and baked goods where a subtle cinnamon flavor is desired, while M4 grade cinnamon sticks are often used in savory dishes and beverages where a more robust cinnamon flavor is needed.

Hamburg Grade – H1 & H2

Although it is coarser than other types of cinnamon, H-grade or Hamburg grade cinnamon is less delicate and fragile than other higher grades of Ceylon cinnamon. The quillings become golden brown and have a larger diameter than those from lower grades.

H1 is considered the highest quality grade, with tightly rolled cinnamon sticks that have a delicate texture and a sweet aroma. H2 is the second-highest grade, with slightly thicker cinnamon sticks that have a slightly stronger aroma.

Both H1 and H2 grades of Ceylon cinnamon are considered to be of good quality and suitable for use in cooking, baking, and other applications.

Ceylon Cinnamon Bale Form

In the bale form, Ceylon cinnamon is sold in long, cylindrical bundles of cinnamon sticks. The sticks are tightly wrapped and pressed together, forming a dense, solid block of cinnamon. The bales are usually wrapped in a layer of plastic or other packaging material to protect other contaminants.

The bale form of Ceylon cinnamon is commonly used in commercial settings, such as food manufacturing and processing, where large quantities of cinnamon are needed. However, for most consumers, Ceylon cinnamon is more commonly sold in ground or stick form in smaller quantities.
